Sephardic Specialties: Shifta Bamia
(Iraqi style Meatballs with Okra)

Makes 3 to 4 servings

Ingredients

  • 1 lb. Ground Beef
  • 2 med. Onions
  • 1/2 c. finely chopped Parsley (or celery) leaves
  • 1/2 t. Turmeric
  • 2 T. Oil
  • 1 med. Tomato
  • 1/2 can Tomato paste
  • 1 T. Sugar
  • 1/2 c. Tamarind (or lemon) juice
  • 1 can or 1 pkg. frozen Okra (defrost and rinse well)
  • Salt and pepper
  • Water
Preparation
  1. Put ground beef into a bowl and add 1 finely grated onion.
  2. Add chopped parsley (or celery) leaves, 1/4 t. turmeric, salt and pepper.
  3. Add a little water (to hold mixture together), mix well with hands and form into small balls.
  4. Chop onion finely into pot and saute with 2 T. oil until golden brown.
  5. Add meatballs to pot and gently saute on medium-high heat until lightly browned, and then remove from oil.
  6. Chop tomato and add to onion and oil. Saute lightly.
  7. Add tomato paste and stir in with sugar, salt, pepper and 1/4 t. turmeric.
  8. Add okra and gently stir-fry together.
  9. Add 2 1/2 c. water and tamarind (or lemon) juice, and bring to boil.
  10. Add meatballs and lower heat to medium-low.
  11. Cover and cook for 1/2 hr. stirring occasionally.
  12. Adjust seasoning to taste. The flavour should be sweet and sour.
  13. Serve with white rice.
